I am looking for a meat sauce for the top of burritos. The type that is used at Don Pablo's.?

I have ate this sauce at several different places on top of enchiladas, burritos, and also other types of foods. Chi chis, Don Pablo's, and many other mexican restaurants serve this sauce over their food but are unwilling to share how it is made.
