Okay to saute spinach mix?

If you sauted the mix long enough for the spinach to be tender, the lettuce would be a mess. Remember, these are young greens and not meant to be cooked at all. Separate the spinach first and toss it very briefly in the pan. It will continue to cook once it's off the heat and you don't want over-cooked spinach.
